Easy Homemade Fruit Snacks!


Fruit snacks are awesome, if they aren't filled with preservatives, HFCS (high fructose corn syrup), and all that other nasty crazy mess that's unknown. They're an easy snack, so it's something that's easily reached for. I always feel better making my OWN stuff for Hasting, because I know exactly what's in it. Even IF it isn't all organic ingredients, I still feel sooo much better knowing what's going in his and my (yes I eat these things too!) body! 

A friend of mine made these a couple of weeks ago when we went to her house, and I'm pretty sure her recipe was the same! They are so good, and such a hit with Hasting! They won't last long in our home, and are good refrigerated OR kept at room temperature. 

THE INGREDIENTS: 


- 2/3C fresh lemon juice or orange juice (if you don't want sour/tangy I suggest using orange juice). I didn't have orange juice, nor FRESH lemon juice so I settled for what I had this go round! 

- 2/3C of frozen OR fresh berries (blueberries, strawberries, raspberries all will work!)

- 1 to 2T of honey. I used 2! 

- 5T of Gelatin 

So lets get started! 

THE HOW TO!: 

1. Pour juice and berries into a small saucepan. Heat over medium heat, stirring occasionally until berries become tender and begin to soften.



2. Add honey and stir until completely incorporated. You will want the fruit to dissolve quite a bit until you have a compote.

3. Puree mixture using a immersion blender or small blender. I just used my regular blender! 




4. Let sit, off heat, for 5 – 10 minutes.


5. Whisk in gelatin, one tablespoon at a time. Whisk vigorously until completely incorporated, mixing the gelatin in very gradually to avoid lumps. (If you do get lumps, just run the mixture through your blender again or you can put it back on the heat to help dissolve the gelatin.)


6. Pour into a 8 x 8 or 9 x 9 glass dish. Refrigerate until set (30 minutes to an hour). Cut in small squares. You could use molds if you have those. I have A mold, but not enough for what this recipe makes!


My pan was a little bigger, but that's ok it just meant they weren't AS thick! I also use a spatula to break the gummy away from the edges and from the bottom of the pan once cooled!

VBAC Birth Plan

It has been over a year since I last sat down with my laptop for a blog. A LOT has happened. Most people who read these blogs are people who keep up with me frequently, so I won't bore you with some excessively long post about what we've been up to. The biggest thing though, is that we are expecting again! And we are only a little less than 2 weeks away from the delivery of our baby GIRL. I thought I would want to sit down and blog all about pregnancy after loss, and all the highs and lows that come with it. But the truth is, I've just really enjoyed being a little bit more low key with it. We've decided she is our last baby, and my husband took permanent measure to ensure that (love you babe). We announced the pregnancy publicly via social media after we found the gender out around 15 or 16 weeks.  I am planning to have a natural VBAC (vaginal birth after cesarean), with the hospital that we delivered Sadler at, which is also where Hasting was born

On Saturday morning, 12/14, I started having slight bloody show. I also had frequent bowel movements, which can be a sign that labor is near. I continued the day cleaning house, and doing all my normal daily routines. Saturday night, I ended up not getting any sleep. I slept for about an hour.
